In anticipation of the long 7-hour bus ride to my summer camp, every year my mother would ask me what special food I would most appreciate for the journey. And every year my answer was the same: an entire loaf of her delicious sweet challah bread. During the trip, I would tear off pieces to munch on, deliberately rationing the portions so the challah would last the entire journey. Savoring her challah made the separation from home a bit more comforting and that long trek to camp just a bit easier.
Next week our office manager/broker, Rusti Segaras, will be leaving the Brad Lippitz Group after more than 6 years with us; her husband, soccer great Gonzalo Segares (and assistant US men's Olympic soccer team coach!), was relocated to Atlanta with the U.S. Soccer Federation. Planning a farewell team dinner for Rusti was no easy feat, given that SHE is the one who had brilliantly planned and orchestrated each of our group events during her tenure. From team birthday celebrations to the Lakeview East Arts Festival Booth to the Dog Adoption Fair, Rusti’s golden touch made everything special.
Coming up short with ideas on my own, I asked her what she would most appreciate for her farewell dinner. Without skipping a beat, she answered: my fried matzah (I had brought in some leftovers to the office during Passover last April). And we decided on a pajama-breakfast-fried matzah themed farewell dinner for Rusti.
Needless to say - excluding everyone’s pajama outfits, the fried matzah stole the show.
Although she won’t have a batch for the road, I will share the basic recipe which she can whip up in Atlanta (and, now, you can too!). Hopefully, it will make the separation a bit more comforting. So bon voyage, Rusti, and enjoy:
First, sauté diced onion and chopped beef salami in some canola oil. Then, soak some matzah in water in a large bowl for about 10 mins (you may have to weigh it down). Drain the water and try to get as much out of the matzah as possible. Beat eggs (about 1.5 or 2 eggs to each piece of matzah) and add to matzah. Gently break it up. Add more some more oil to salami/onions and add matzo/egg mixture. Cook like scrambled eggs on the stove, but longer. Stir occasionally and scrape from the bottom. Add salt and serve.
